Craving something healthy, fresh, delicious, AND easy to make? We’ve got just the dish for you! Whip up this super simple salmon marinade, and while your fish fillets are resting in its delicious flavor, put together a crisp green salad. You can add any salad ingredients you have, but we love the mix of tomatoes, green olives and red onions for their contrasting tastes and colors. Grill your salmon until just done, place over your salad and dig in!

Ingredients

  • 4 salmon fillets
  • ¼ cup olive oil
  • 2 tbsp. soy sauce
  • 1 tsp. garlic powder
  • Salt & pepper, to taste
  • 8 cups lettuce, like mixed baby greens
  • ¾ cup cherry tomatoes, halved
  • ½ cup green olives
  • ½ cup red onion, thinly sliced

Instructions

  1. Preheat grill to medium heat.
  2. Mix olive oil, soy sauce, garlic powder, salt and pepper to form the marinade; coat salmon fillets and allow to sit 20 minutes.
  3. Make the salad while the salmon marinates, mixing all ingredients and dividing into 4 large bowls.
  4. Grill salmon fillets 5-7 minutes per side, or until salmon is cooked to temperature and grill marks have formed.
  5. Remove and place one salmon fillet gently onto each bowl of salad; serve immediately.
